Hi FOOD TECH's
the desired mixture with desired water was mixed & fed into inlet. Then the slot using the port size in circular fashion extrudes the vada. then the vada is exposed to the hot oil at specific time temp combination, which can be adjusted by the length of the tube where vada is fried. on either sides it gets fried & the VADA is ready to eat!!!

Well Rohan, Normally this kind of machine are not suitable for longer distance dispatches. Generally it is used in Star Hotels and Hotel Like Saravana Bhavan & Annapurna etc... in Chennai. These kind of hotels are having lot of branches in the same city itself. They will produce these vadas in one place and transfer them to the respective branches.

The technology used here is really a simple way of managing the manufacturing. The only critical aspect to see it as a business case, would be how will it be transferred over longer distances. Moreover, traditionally this product is being consumed as hot & hence, difficult to manage distribution chain. other aspect that i am assuming is, cold storage / transfer would not have an impact on sensorial aspects of the product.
