Hi Pratik,

Digital refractometer also works on the principle of refraction.

Freezing will not ahnage TSS rather it will change the refractive index. Thus the reading will also change.

Dear Sanjeev sir,
Digital refractometer (ATAGO) shows upto +/- 0.01% was used at 20'C temp.
I think that freezing may carry certain compositional changes (TSS) in pulp which may be affecting brix.

Dear Pratik,

I dont know whether accuracy of 0.75 to 1 brix is possible in your equipment or not. But considering your equipment be correct, i can comment on the possibility of change in brix (dont know increase or decrease).

 

See, the brix is being measured in refractometer. This refractometer works on the principle of refraction of light while passing through the sample. This refraction depends on the refractive index of the material. After freezing the refractive index of material changes, so the brix will also change. Hope this answers your query.

Freezing should decrease or increase brix of fruit pulp. As i experimented, kept mango pulp for about 15 min in freez and brix was decreased by about 0.1 - 0.75. 'brix. May i know the reason?

FDA and FPO licence...but basically FDA is mandatory and FPO for exports and out of states marketing of ur products.....following documents are required for FDA licence...u required pulper, Slicer, Refiner, Homogenizer, Steam jacketed kettle, boiler, fruit washer, conveyor belt, vaccumn concentrator,...all of machineries are above 65000 Rs.....for minimum 200 kg per hour capacity it can be different from different supplier....
