how acclerated shelf life studies are carried out? what quality attributes usually they check ?

Hello Sandeep,

In biscuit industry we keep packed biscuits in humidity chamber where the humidity is kept at 80 to 85%, weekly the quality testing is done like all the sensory attributes are checked like aroma, taste, color etc and testing like moisture, water insoluble ash is done. 

1 batch is kept for two months and tested weekly for the above mentioned attributes.
